:: Ingredients for Carrots with Coconut
Carrots- 4 grated
Medium sized onion- 1 chopped
Grated coconut- 3 table spoons
Red chilies- 3
Mustard seeds- 1 tsp
Urad dhal- 1 tsp
Sal to taste
Oil- 2 tablespoons

:: How to make Carrots with Coconut
Heat oil in a pan. Add mustard seeds. When it starts to
pop add urad dhal & red
chilies and fry for few minutes. Add the chopped onions
and fry until the onions
become translucent. Then add the grated carrots and salt
and mix well. Add little
water. Cover the pan. Lower the heat and cook until the
carrot is cooked. Add the
grated coconut. Stir once and remove from heat.
