:: Ingredients for Chennai Curry paste
Garlic- 10 flakes
Ginger- 2 inch piece
Red chili powder- 2 tsps
Turmeric powder- 1 tsp
Coriander powder- 1 cup
Cumin powder- 1/2 cup
Black pepper powder- 1 tsp
Ground mustard seeds- 1 tsp
Cider vinegar- 1/4 cup
Oil- 3/4 cup


:: How to make Chennai Curry paste
Grind all the ingredients except oil into
a smooth paste. Heat oil in a heavy-
bottomed pan and fry the ground paste over
medium heat until the oil separates from
the mixture. Drain any excess oil and
allow it to cool completely. Store in an
airtight container and refrigerate.
